- equivalent of 2 eggs without the fat and cholesterol (for example, Egg Beaters)
- 1 Tbsp. skim milk
- 1/2 c. one or any combination of the following: broccoli flowerets, cauliflower flowerets, sliced carrots, sliced mushrooms, chopped green bell pepper and chopped onion
Directions

1Mix egg substitute and milk in bowl.

2Set aside.

3Spray skillet with nonstick cooking spray.

4Place on burner and heat.

5Pour mixture in hot skillet.

6Scatter vegetables on one-half side of mixture.

7Fold plain half side of mixture onto vegetables.

8Flip omelet several times until light brown.

9Enjoy without any guilt.
