Healthy Pineapple Quinoa

Ingredients

  • 1 cup tricolor quinoa
  • 2 tablespoons vegetable oil
  • 1 egg
  • 3 cloves garlic minced
  • 1 onion small, diced
  • 1 cup veggies mixed, carrots, peas, green beans
  • 1 cup pineapple chopped
  • 1 1/2 teaspoons salt
  • 1 tablespoon soy sauce
  • 10 shrimps peeled & deveined
  • 1 pinch black pepper
  • 2 cups spinach

Directions

    Rinse quinoa and cook according to package instruction

    Heat vegetable oil on a skillet over medium heat, stir in garlic until brown, add shrimps and spinach
  3. 3
    Beat the egg and push it to the side of the skillet until egg is scrambled & cooked.

    Add in quinoa, pineapple, mixed veggies, onion and heat through. Be careful not to mash the quinoa

    Add in salt, pepper and soy sauce. Season to taste according to your preference.
