Healthy Squash Casserole

Ingredients

  • 1 can low salt cream of mushroom soup
  • egg substitute (equivalent to 1 egg)
  • 3 slices whole grain bread (stale)
  • 3 c. freshly boiled yellow squash, drained
  • 1 c. reduced fat Colby cheese
  • 1/2 tsp. freshly ground pepper
  • 2 Tbsp. Molly McButter sour cream and butter sprinkles

Directions

    Mash squash. Crumble bread.

    Put aside 1/3 of the bread crumbs.

    Mix all other ingredients and put into a large baking dish.

    Top with crumbs. Bake at 350° until brown on top (about 20 to 30 minutes).
