- 1 can low salt cream of mushroom soup
- egg substitute (equivalent to 1 egg)
- 3 slices whole grain bread (stale)
- 3 c. freshly boiled yellow squash, drained
- 1 c. reduced fat Colby cheese
- 1/2 tsp. freshly ground pepper
- 2 Tbsp. Molly McButter sour cream and butter sprinkles
Directions

1Mash squash. Crumble bread.

2Put aside 1/3 of the bread crumbs.

3Mix all other ingredients and put into a large baking dish.

4Top with crumbs. Bake at 350° until brown on top (about 20 to 30 minutes).
