- 2 c. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. packed light brown sugar
- 1 egg
- 1 c. skim milk
- 3/4 c. chopped walnuts
Directions

1Preheat oven to 350°.

2Spray an 8 x 4-inch loaf pan with oil. Sift together the flour, baking powder, soda, salt and sugar; set aside.

3In second bowl, beat egg until thick.

4Add milk; continue beating until blended.

5Add dry ingredients and nuts; stir until mixture is moist.

6Turn mixture into pan.

7Bake for 40 minutes, or until tester comes out clean.

8Loosen loaf from sides of pan.

9Turn out, right side up, on wire rack to cool.
