- 3 tbsp oil
- 3 medium popatoes, cubed
- 4 pieces of bacon, cut in 1-inch strips
- 1/2 cup onion, chopped
- 1 salt and pepper to taste
- 6 eggs
- 2 links of chorizo (I use beef)
- 1 shredded cheddar cheese
Directions

1Heat 2-3 tablespoons of oil on medium high in a large skillet.

2Add potatoes, bacon, and onion.

3Cook until bacon begins to crisp and potatoes are tender, stirring occasionally.

4Optional: add salt and/or pepper to taste.

5Remove casing from chorizo sausage.

6Add to mixture in skillet, and cook until sausage is done, stirring often.

7(Sausage will harden similar to the consistency of cooked ground beef.)

8Scramble eggs.

9Add to mixture in skillet.

10Turn often until eggs are done.

11Remove from heat.

12Sprinkle mixture with shredded cheddar cheese.

13For Heart Attack Burritos, serve with flour tortillas.
