Ingredients

  • 3 tbsp oil
  • 3 medium popatoes, cubed
  • 4 pieces of bacon, cut in 1-inch strips
  • 1/2 cup onion, chopped
  • 1 salt and pepper to taste
  • 6 eggs
  • 2 links of chorizo (I use beef)
  • 1 shredded cheddar cheese

Directions

    Heat 2-3 tablespoons of oil on medium high in a large skillet.

    Add potatoes, bacon, and onion.

    Cook until bacon begins to crisp and potatoes are tender, stirring occasionally.

    Optional: add salt and/or pepper to taste.

    Remove casing from chorizo sausage.

    Add to mixture in skillet, and cook until sausage is done, stirring often.

    (Sausage will harden similar to the consistency of cooked ground beef.)

    Scramble eggs.

    Add to mixture in skillet.

    Turn often until eggs are done.

    Remove from heat.

    Sprinkle mixture with shredded cheddar cheese.

    For Heart Attack Burritos, serve with flour tortillas.
