  • 1 1/2 c. cornmeal, white stoned ground
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 Tbsp. canola oil
  • 2 egg whites
  • 2 c. buttermilk

Directions

    Mix dry ingredients well.

    Add slightly beaten egg whites, canola oil and buttermilk.

    Mix until smooth.

    Pour into hot canola oil-coated cast iron skillet.

    Bake in a 450° oven for 20 minutes to a golden brown.
