- 1 Boneless Skinless Chicken Thigh
- 1 Quinoa
- 1 Onion, diced
- 1 Red pepper, diced
- 1 Spinach, chopped
- 1 garlic clove, thinly sliced
- 1 Lemon juice
- 1 Salt & pepper
- 1 Garlic powder
- 1 Oregano leaves
- 1 Steak spice
Directions

1Preheat oven to 350, put water to boil, preheat pan on medium heat.

2In a mixing bowl add olive oil, lemon juice, chicken, garlic powder, steak spices and oregano leaves.

3Line a baking pan with aluminum foil and coat the foil with olive oil.

4Place chicken on top and put it in the oven for about 20 mins.

5Simmer quiona for about 10 mins, depending how much you are cooking.

6Pan fry garlic and onions first, then add red peppers.

7Allowing the oil to soak with garlic and onion will create more flavor.

8Combine quinoa with your veggies.

9Add spinach, dash of lemon juice, salt and pepper to your taste and oregano leaves.

10Once done, enjoy!
