- 1 1/2 c. granulated sugar
- 1/2 tsp. cream of tartar
- 4 egg whites (unbeaten)
- 3 Tbsp. flaked coconut (this item can be omitted)
- 4 egg yolks (unbeaten)
- 1 Tbsp. grated lemon peel
- 3 Tbsp. lemon juice
- 1/8 tsp. salt
- 2 c. heavy cream
- strawberries
Directions

1Heat oven to 275°.

2Sift 1 cup of the sugar with the cream of tartar. With mixer at medium speed, beat egg whites until stiff but not dry; slowly add sugar mixture until stiff and glossy. Spread mixture over the bottom and sides of a 9-inch well-greased glass pie plate.

3Make the bottom thinner than the sides. Sprinkle with 2 tablespoons of coconut.

4Bake for 1 hour, until light and crisp.

5Toast rest of coconut.
