  • 2 c. milk, scalded
  • 1/2 c. butter
  • 3/4 c. sugar
  • 2 cakes yeast or 2 pkg dry yeast
  • 1/4 c. lukewarm water
  • 4 egg yolks, beaten
  • 1 tsp grated lemon rind
  • 1 tsp salt
  • 6 1/2 to 7 c. flour

    Combine milk, butter and sugar. Cool to lukewarm. Dissolve yeast in lukewarm water, add yeast mixture, egg yolk, lemon rind and salt to milk mixture. Add 4 c. flour and beat until satiny. Cover

    and let rise until full of bubbles. Continue to add flour mixture until a stiff batter is formed. Knead lightly until smoothe. Place in greased bowl and let rise until very light. Bake 20 minutes at 375°. Yields 20 to 24 servings.
