- 2 Tbsp. fresh thyme leaves or 2 tsp. dried thyme leaves
- 2 Tbsp. fresh chopped rosemary or 2 tsp. dried crushed rosemary
- 2 Tbsp. olive or salad oil
- 2 tsp. paprika
- 1 1/2 tsp. salt
- 1 tsp. coarsely ground pepper
- 2 (3 1/2 lb.) broiler-fryers, each cut into quarters
- fresh thyme and rosemary (for garnish)
Directions

1Preheat oven to 425°.

2In cup, mix thyme, rosemary, oil, paprika, salt and pepper.

3With hands, rub chicken quarters with herb mixture.

4Place chicken quarters, skin side up, on rack in large roasting pan.

5Roast chicken 40 minutes (do not turn) or until juices run clear and it is golden.

6Serve hot or refrigerate to serve cold later.
