Herb Crusted Beef Roast

Ingredients
- 2 cloves garlic, minced or pressed
- 2 Tbsp. salad oil
- 2 tsp. dry basil
- 1/8 tsp. pepper
- 4 lb. sirloin tip or cross rib roast
- 2 to 3 slices firm white bread
- 1/2 c. finely chopped parsley
- 2 green onions including tops, finely chopped
- 4 Tbsp. butter or margarine, melted
Directions

1Stir together garlic, oil, basil and pepper and brush even over meat.

2Place roast fat side up on rack in shallow baking pan. Insert thermometer in thickest part.

3Roast, uncovered, in a 325° oven for 1 hour.

4With fingers, crumble bread to make 1 cup crumbs.

5Combine with parsley, onions and butter.

6Remove roast; quickly pat crumb mixture over meat.

7Return to oven; roast until thermometer is 135° (rare) to 155° (medium).

8Let stand 10 to 20 minutes before carving.
