Herbed Beef Stew

Ingredients

  • 1/2 c. flour
  • 1/2 tsp. salt
  • 4 lb. stew beef
  • 1/4 c. olive oil
  • 1 can (32 oz.) plum tomatoes
  • 1 2/3 c. beef broth
  • 1/2 c. red wine
  • 1 Tbsp. garlic
  • 1 tsp. each: basil, rosemary, oregano and thyme
  • 1/2 tsp. pepper
  • 2 bay leaves
  • 1 lb. carrots
  • 12 oz. mushrooms
  • 12 oz. green beans
  • 4 large celery stalks
  • 1/2 c. parsley

    Heat oil.

    Cover stew beef with flour and add to oil.

    Brown over medium-high heat.

    Stir in tomatoes, broth, wine, garlic, salt, herbs, pepper and bay leaves.

    Once boiling, reduce heat and simmer for 1 1/2 hours, covered.

    Add vegetables and cook one hour longer.
