- 1/2 c. flour
- 1/2 tsp. salt
- 4 lb. stew beef
- 1/4 c. olive oil
- 1 can (32 oz.) plum tomatoes
- 1 2/3 c. beef broth
- 1/2 c. red wine
- 1 Tbsp. garlic
- 1 tsp. each: basil, rosemary, oregano and thyme
- 1/2 tsp. pepper
- 2 bay leaves
- 1 lb. carrots
- 12 oz. mushrooms
- 12 oz. green beans
- 4 large celery stalks
- 1/2 c. parsley
Directions

1Heat oil.

2Cover stew beef with flour and add to oil.

3Brown over medium-high heat.

4Stir in tomatoes, broth, wine, garlic, salt, herbs, pepper and bay leaves.

5Once boiling, reduce heat and simmer for 1 1/2 hours, covered.

6Add vegetables and cook one hour longer.
