- 3 lb. chicken breast, skinned and boned
- 1/4 tsp. garlic powder
- 1/8 tsp. dried thyme
- 1/4 c. freshly grated Parmesan cheese
- 1 Tbsp. minced fresh parsley
- 1/3 c. fine bread crumbs
- 1/4 tsp. paprika
- 1 Tbsp. vegetable oil
- 2 Tbsp. margarine
- 1/2 c. Marsala wine
Directions

1Cut chicken breast into pieces 1 1/2 to 2 inches wide.

2Combine next 6 ingredients in a paper bag.

3Coat chicken with mixture a few pieces at a time by shaking bag.

4Place chicken in a baking dish and press any remaining seasoning into chicken.

5Sprinkle chicken with oil and melted butter.

6Bake, uncovered, at 350° for 30 minutes.

7Pour wine over chicken and cover with foil.

8Reduce heat to 325°.

9Bake 15 minutes.

10Remove foil.
-
11Raise heat to 350° and bake 10 minutes.
