Ingredients
- 1 medium onion, chopped
- 1 Tbsp. margarine
- 1 c. uncooked long grain rice
- 1 (14 1/2 oz.) can chicken broth
- 1 bay leaf
- 1/2 tsp. dried thyme
- 1/4 tsp. dried rosemary
- 1/4 tsp. salt
- 1/4 c. chopped parsley
- 1/4 c. toasted peanuts
Directions

1Saute onion in margarine about 5 minutes.

2Stir in rice and cook until rice is coated with butter and translucent.

3Add water to broth to make 2 cups.

4Stir into rice.

5Add bay leaf, thyme, rosemary and salt.

6Bring to a boil; reduce heat to low, cover and simmer 20 minutes until rice is tender and liquid absorbed. Remove bay leaf.

7Stir in nuts, if desired, and parsley.
