Herbed Roquefort Biscuits

  • 1 (3 oz.) pkg. Roquefort cheese, crumbled
  • 2 Tbsp. minced green onion tops
  • 1 tsp. dried whole basil
  • 1/2 tsp. dried whole thyme
  • 2 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1/4 c. plus 2 Tbsp. cold unsalted butter, cut in pieces
  • 3/4 c. buttermilk

Directions

    Combine the first 4 ingredients in a small bowl; set aside. Combine flour, baking powder, salt and baking soda in a medium bowl.

    Cut in cheese mixture and butter with a pastry blender. Turn dough out onto a floured surface; knead lightly 7 to 8 times. Roll dough to 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.

    Place biscuits on a lightly greased baking sheet.

    Bake at 450° for 13 to 15 minutes.
