- 2 salt herrings
- 13 cup dry bread crumbs
- 3 tablespoons butter
- 13 cup cream
- 1 tablespoon chopped chives
Directions

1Soak whole salt herrings for 12 hours in several changes of cold water.

2Remove from water and bone and skin them, producing 4 fillets.

3Preheat oven to 400 degrees.

4Coat fillets thoroughly with bread crumbs.

5Butter small au gratin dish with 1 tablespoon butter, lay on fillets and dot with remaining butter.

6Pour cream over and bake 5 to 10 minutes.

7Sprinkle with chopped chives before serving.
