Ingredients
- 12 cups water
- 1/2 inch fresh ginger, finely grated
- 1 1/2 cups dried hibiscus flowers (also known as Jamaica flowers or flor de jamaica)
- 1 1 cup stevia (adjust to taste) or 1 cup agave syrup (adjust to taste)
- 2 tablespoons lime juice, freshly squeezed (from 1 large lime)
Directions

1Combine water and ginger in a large pot and bring to a boil over high heat.

2Remove from heat and stir in Jamaica flowers and sugar until sugar is dissolved. Let steep 10 minutes.

3Strain through a chinois 'china cap' or fine mesh sieve into a large, heat-resistant bowl or pot. Stir in lime juice and set aside to cool. Refrigerate until ready to use.

4Serve over ice.
