Ingredients

  • 2 cans roast beef with gravy or leftovers from roast
  • 1 1/2 lb. ground beef
  • 1 large onion, chopped
  • 2 (4 oz.) cans diced green chilies
  • 2 Tbsp. flour
  • 1/2 tsp. ground cumin
  • 2 pkg. large flour tortillas
  • 2 Tbsp. oil
  • 1 clove garlic, minced
  • 2 tsp. salt
  • 3/4 c. grated cheese

    Saute onion and garlic in oil.

    Add ground beef and cook until no longer pink.

    Mix roast beef in first mixture.

    Add flour, salt and cumin; stir and cook 1 minute.

    Add chilies and cheese.

    Heat tortillas in microwave (just until soft).

    Spread filling over tortillas and roll like a burrito.

    Deep fry in oil until brown and crisp.

    Serve with salsa, lettuce, avocado and/or sour cream.
