- 1 large hen or fryer
- 1 stick margarine
- 1/4 c. liquid hickory smoke
Directions

1In roasting pan, pour 2 to 3 cups of water and all but 1 tablespoon liquid hickory.

2Place roasting rack in pan.

3Place chicken on rack.

4Put stick of margarine inside chicken, then put 1 tablespoon of hickory smoke inside chicken.

5Cover tightly with aluminum foil.

6Place in 300° oven for 1 1/2 to 2 hours.
