Ingredients

  • 2 c. sifted all-purpose flour
  • 1/3 c. instant milk
  • 1/4 c. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. oil
  • 1 egg
  • 1 c. water
  • 1/3 c. your favorite jam or preserves

    Preheat oven to 400°.

    Mix together all dry ingredients, then add oil, egg and water.

    Mix quickly but well. Spoon half of the batter into 12 greased muffin cups, filling them about 1/3 full. Drop about 1 teaspoon of jam into center of each. Spoon rest of batter into cups.

    If desired, sprinkle tops with a little cinnamon sugar. Bake near center of oven at 400° for 20 to 25 minutes.
