  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs, slightly beaten
  • 1 1/2 c. oil
  • 1 c. chopped pecans
  • 1 c. coconut
  • 2 c. dried bananas
  • 1 large can crushed pineapple, drained
  • 1 1/2 tsp. vanilla

Directions

    Mix flour, sugar, soda, salt, and cinnamon. Add eggs and oil; mix well. Add remaining 5 ingredients. Makes 2 loaf pans. Bake at 350° for 1 hour to an hour and 20 minutes.
