Holiday Mashed Potatoes

  • 3 lb. (about 11 medium) potatoes, cooked and mashed
  • 1 (8 oz.) cream cheese
  • dash of pepper
  • 1/4 c. butter
  • 1/4 c. onion, grated
  • 1 tsp. salt
  • 2 eggs, lightly beaten
  • 1/2 c. sour cream
  • 1/2 c. milk
  • 4 oz. Cheddar cheese

Directions

    After removing lumps from potatoes, add cream cheese and butter in small pieces. Mix in sour cream. Mix milk, eggs and onions. Add salt and pepper. Beat well. Place in greased casserole; refrigerate several hours or overnight.

    Bake in preheated oven at 350° for 45 minutes. Makes 8 to 12 servings.
