Holiday Mashed Potatoes

Ingredients
- 3 lb. (about 12 medium) potatoes, peeled, cooked and hot
- 1 (8 oz.) pkg. cream cheese at room temperature
- 1/4 c. butter
- 1/2 c. sour cream
- 1/2 c. milk
- 2 eggs, slightly beaten
- 1/4 c. chopped onion
- 1 tsp. salt
- dash pepper
Directions

1In a large mixing bowl, beat hot potatoes until all lumps are removed.

2Add cream cheese (in small pieces) and the butter.

3Beat well until cheese and butter are completely melted and mixed. Stir in sour cream.

4To the milk add the eggs and onion.

5Add to the potato mixture along with salt and pepper.

6Beat well until light and fluffy.

7Place in a greased 9 inch round casserole. Refrigerate several hours or overnight.

8Bake in a preheated oven at 350° for 45 minutes or until lightly browned on top.
