- 1 1/3 c. flour (King Arthur works best)
- 2 large eggs

1Place flour in bowl.

2Make well in center.

3Place eggs in well and beat with fork.

4Gradually draw the flour into the eggs.

5Mix constantly.

6If moist, add more flour.

7It may not use all the flour.

8Let rest a few minutes.

9Knead on floured surface for 8 minutes.

10Cover dough with plastic (or bowl).

11Let rest 10 to 15 minutes.

12Knead dough for 1 minute.

13Roll dough to desired thickness and cut to desired type.

14Cook pasta in boiling water until tender, about 5 to 10 minutes.
