Hominy Scramble

- 1 (14 1/2 oz.) can white hominy
- 5 or 6 slices bacon
- 3 large eggs
- 1/4 c. green pepper, chopped
- 5 or 6 drops Tabasco sauce
Directions

1Fry bacon partially done (not crispy).

2Remove from pan and cut in bite-size pieces.

3Add green pepper to drippings.

4When cooked, add hominy and heat through.

5Add bacon.

6Add hot sauce to eggs and beat slightly.

7Add salt to taste.

8Pour eggs in hominy mixture and continue to cook while stirring until eggs are set. Serves 4.
