  • 1 1/2 c. finely diced celery
  • 1 large onion, diced fine
  • 1/2 medium green pepper, chopped fine
  • 1/4 c. butter
  • 1 1/2 packets instant chicken broth mix (any dry instant soup mix may be substituted)
  • 4 1/2 c. cooked hominy grits
  • 3 slices whole wheat bread, cubed
  • 1/2 c. chicken broth
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 3/4 tsp. poultry seasoning
  • 1/8 tsp. white pepper

Directions

    In heavy skillet, melt butter.

    Add celery, onion, green pepper and broth mix; stir and cook until onion is transparent. Transfer to a greased 2 1/2-quart casserole.

    Add remaining ingredients; stir.

    Bake at 450° for 30 minutes or until top is golden.
