  • 3/4 c. raspberry vinegar
  • 3 Tbsp. Dijon mustard
  • 2 Tbsp. soy sauce
  • 2 Tbsp. honey
  • 2 Tbsp. minced basil
  • 1/2 tsp. dried thyme
  • pinch of black pepper
  • 1 lb. boneless chicken

Directions

    In shallow baking dish, combine all ingredients except chicken.

    Add chicken to marinade, turn to coat and refrigerate for 15 minutes.

    Drain marinade from chicken and reserve. Transfer chicken to broiler.

    Broil until no longer pink inside. Place reserved marinade in a 1-quart saucepan.

    Simmer for 5 minutes or until reduced by half.

    To serve, pour marinade over chicken.
