Honey Dijon Chicken Nuggets

- 1 1/2 c. apricot spread
- 1/4 c. plus 2 tsp. honey
- 3/4 tsp. garlic powder
- 1 c. water
- 2 Tbsp. water
- 6 (4 oz.) skinned, boned chicken breast halves, cut into 1-inch pieces
- 1/2 c. Dijon mustard
- 1 1/4 tsp. ground red pepper
- 2 c. crushed pretzels
- 1 Tbsp. plus 1 tsp. cornstarch
Directions

1Combine apricot spread, mustard, honey, pepper and garlic powder in a medium bowl and stir well.

2Measure 1 cup apricot mixture and set aside.

3Dip chicken pieces in remaining apricot mixture.

4Dredge in crushed pretzels.

5Place on 2 large baking sheets.

6Bake at 400° for 15 minutes or until chicken is done.
