  • 3 to 3 1/2 lb. skinned, boneless chicken breasts
  • 1/4 tsp. salt
  • 1 (10 oz.) jar peach preserves
  • 1/2 c. barbecue sauce
  • 1/2 c. chopped onions
  • 2 Tbsp. light soy sauce
  • 1 (6 oz.) can water chestnuts, sliced and drained
  • 1 green pepper, cut in strips
  • dash of pepper

Directions

    Place chicken breasts in a baking dish.

    Sprinkle with salt and pepper.

    Combine preserves, barbecue sauce, onions and soy sauce.

    Pour over the chicken breasts.

    Cover and bake at 325° for 1 1/2 hours or until done.

    Add water chestnuts and green pepper for final 10 minutes.
