- 2 c. black-eyed peas or beans, washed and drained
- 1/2 lb. sliced bacon
- 1 onion, minced
- 2 c. rice
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1 red hot pepper
Directions

1Bring peas and 3 quarts water to a boil.

2Boil 2 minutes. cover pan and let sit for 1 hour.

3Cut up bacon and cook until brown; add onions and cook until golden.

4Pour bacon mixture into peas.

5Cover and simmer until peas are tender, about 1 hour.

6Stir in rice and seasonings.

7Cook, covered, without stirring, until rice is tender.

8Makes 8 to 10 servings.
