- 2 c. dry black-eyed peas
- 3/4 c. salt pork, bacon or ham
- 1 c. diced onions
- 1 c. long-grain or brown rice (uncooked)
- 1/4 tsp. dried thyme
- 2 tsp. red pepper flakes
- salt and black pepper to taste
Directions

1Put peas and 8 cups or more water into a covered pot and bring peas to a boil over high heat, then reduce to simmer about 45 minutes or until tender.

2While peas are cooking, cut meat into cubes and dice onion. Put in skillet and fry 5 minutes, until crisp.

3When peas are done combine meat, onions, rice, thyme, red pepper and peas and stir.

4Simmer another 25 minutes until rice is done and liquid is absorbed.
