Ingredients
- 1 lb black-eyed peas, frozen
- 1 yellow sweet onion, diced fine
- 2 garlic cloves, minced
- 14 cup canola oil
- 4 slices bacon, diced
- 2 (14 1/2 ounce) cans diced tomatoes
- 2 cups chicken stock
- 1 dried bay leaf
- 14 teaspoon white sugar
- 1 teaspoon seasoning salt, such as creole salt
- 1 teaspoon red pepper sauce, such as Tabasco
- 1 cup white rice, prepared
Directions

1In a dutch oven or stock pot, heat oil on medium high heat.

2Add onion and creole salt.

3Add bacon pieces.

4Cook till almost cooked, then add garlic.

5When vegetables are soft and bacon is fully cooked, pour in 2 cans tomatoes (with juice) and stir.

6Add frozen black eyed peas, stir.

7Add sugar, bay leaf, pepper sauce, and chicken stock.

8Cover and simmer for 1 hour, at least, then turn down to warm for another hour.

9Stir in rice, remove bay leaf and serve with corn bread!
