Ingredients

  • 1 lb black-eyed peas, frozen
  • 1 yellow sweet onion, diced fine
  • 2 garlic cloves, minced
  • 14 cup canola oil
  • 4 slices bacon, diced
  • 2 (14 1/2 ounce) cans diced tomatoes
  • 2 cups chicken stock
  • 1 dried bay leaf
  • 14 teaspoon white sugar
  • 1 teaspoon seasoning salt, such as creole salt
  • 1 teaspoon red pepper sauce, such as Tabasco
  • 1 cup white rice, prepared

Directions

    In a dutch oven or stock pot, heat oil on medium high heat.

    Add onion and creole salt.

    Add bacon pieces.

    Cook till almost cooked, then add garlic.

    When vegetables are soft and bacon is fully cooked, pour in 2 cans tomatoes (with juice) and stir.

    Add frozen black eyed peas, stir.

    Add sugar, bay leaf, pepper sauce, and chicken stock.

    Cover and simmer for 1 hour, at least, then turn down to warm for another hour.

    Stir in rice, remove bay leaf and serve with corn bread!
