- 1 lb. black-eyed peas
- 1 c. chopped onions
- 1 c. uncooked rice
- 1 lb. sausage, browned and drained or 1 1/2 c. chopped ham
- 1/2 red pepper, chopped
- salt and pepper to taste
Directions

1In a large pot, cook peas until 2/3 done.

2Add remaining ingredients to peas and simmer until peas are tender, about 45 minutes.

3Add warm water to make enough soup if needed.

4Serve with corn bread.

5Serve as one pot meal.
