- 1 lb. black-eyed peas
- 3 pt. cold water
- 1/2 lb. sliced salt pork or bacon
- 1 tsp. Tabasco sauce
- 1/2 tsp. salt
- 2 Tbsp. bacon fat or lard
- 2 medium onions, chopped
- 1 c. uncooked long grain rice
- 1 1/2 c. boiling water
Directions

1Cover peas with 3 pints of cold water in large kettle.

2Soak overnight.

3Add salt pork, Tabasco sauce and salt.

4Cover and cook over low heat for about 30 minutes.

5Meanwhile, cook onions in bacon fat until yellow and add to peas with rice and boiling water.

6Cook until rice is tender and water is absorbed, about 20 to 25 minutes, stirring occasionally.

7Yields about 8 cups or 7 to 8 servings.
