- 1 (8 oz.) pkg. dried black-eyed peas
- 1 1/2 lb. ham bone
- 1 small onion, chopped
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. instant rice
- 1 (1 lb.) can tomatoes
Directions

1Place peas in large saucepan; cover with boiling water.

2Add ham bone, onion, salt and pepper.

3Simmer for 1 hour and 15 minutes until peas are done.

4Arrange rice over peas; add enough water to cover rice.

5Bring to boiling point; cover and remove from heat.

6Let stand until rice is tender.

7Stir in tomatoes. Makes 6 servings.
