  • 6 medium beets (about 2 lb.)
  • 1 c. grated horseradish (1 medium size root)
  • 1/4 c. vinegar
  • 1/3 to 1/2 c. sugar
  • 2 Tbsp. salt

Directions

    Cook beets in pot of water until beets are done; test with a fork to see if they are tender.

    Cool beets and grate fine.

    Mix grated beets and horseradish together.

    Then add sugar, salt and vinegar.

    If you like it a little more sour, add some more salt.
