Ingredients
- 12 large eggs
- 3 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ounces bacon, cooked crisp and chopped, 1 tablespoon bacon fat reserved
- 1 1/2 cups (about 6 ounces) diced yellow onion
- 1 (14 1/2-ounce) can diced tomatoes, drained
- 1 pound diced roasted turkey
- 1 pound mixed cheddar and monterey jack, shredded
- Three Cheese Mornay Sauce, recipe follows
- 3 1/2 cups half-and-half
- 2 tablespoons butter
- 1/4 cup diced onion
- 2 tablespoons flour
- 1/3 cup Parmesan
- 1/3 cup monterey jack
- 1/3 cup Swiss cheese
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon hot pepper
Directions

1Preheat the oven to 350 degrees F.

2In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper.

3Set aside.

4In a small saute pan, heat 1 tablespoon of bacon grease over medium heat.

5Add onions and saute until softened.

6Add diced tomatoes and stir well.

7Set aside.

8Spray a 13 by 9-inch pan with non-stick spray.

9Layer turkey in the bottom of the pan, cover with bacon and sauteed onion mixture.

10Cover filling ingredients with shredded cheeses.

11Pour egg mixture over all and press lightly to make sure all ingredients are coated with the egg mixture.

12Bake until puffed and set, about 45 to 55 minutes.

13After about 30 minutes, rotate and cover with aluminum foil if the top looks brown.

14Cut into 8 large pieces and cover with Three Cheese Mornay Sauce.

15Heat half-and-half in a small saucepan to 160 degrees F. Set aside.

16Melt butter in medium heavy-bottomed saucepan.

17Add onion and saute until translucent.

18Add flour and whisk to combine.

19Lower heat and cook for about 1 minute.

20Pour heated half-and-half into the flour mixture, whisking constantly.

21Reduce heat and bring to a simmer.

22Whisk until mixture begins to thicken.

23Add remaining ingredients and stir well.
