- 1/2 c. butter
- 1/2 c. flour
- 2 c. milk
- 1 tsp. salt
- 2 egg yolks, beaten
- 6 slices cooked turkey breast
- 3 English muffins, split and toasted
- 1/2 c. grated Cheddar cheese
- 6 tomato slices
- 6 Tbsp. butter
- 2 Tbsp. brown sugar
- 6 slices bacon, fried crisp
- 1/2 c. sliced mushrooms, sauteed in 1 Tbsp. butter and 1 Tbsp. lemon juice
Directions

1Melt butter in saucepan; stir in flour.

2Cook 2 minutes and add milk gradually.

3Stir until thickened.

4Season.

5Add some of the sauce to beaten egg yolks, then return mixture to saucepan. Heat through and keep warm.

6Arrange turkey on muffins.

7Top each muffin with sauce, Cheddar cheese, 1 slice tomato, 1 tablespoon butter and a sprinkling of brown sugar.

8(May be prepared ahead at this point and refrigerated.)

9Before serving, broil 3 to 5 minutes or until lightly brown.

10Garnish with bacon and warmed sauteed mushrooms.
