Hot Chinese Fried Rice

- 2 cups rice
- 3 tablespoons vegetable oil
- 100 grams green beans finely chopped
- 2 each carrots finely chopped
- 1 each onions sliced
- 100 grams cabbage finely chopped
- 2 1/2 each green chili peppers cut lengthwise, optional
- 1 teaspoon garlic finely chopped
- 2 tablespoons soy sauce, tamari
- 1 tablespoons vinegar
- 1 teaspoon chili sauce green
- 1 x salt and black pepper to taste
Directions

1Pick, wash and soak the rice in enough water for 10 to 15 minutes and drain.

2Boil water, add rice and little salt.

3Cook uncovered on low heat until rice is tender.

4Take care not to overcook the rice.

5Each grain of rice should be separate.

6When rice is done, drain and add some cold water and drain again using a large seive and set aside.

7Heat oil in a kadhai / large pan and stir fry all the chopped vegetables.

8Cook for 3 to 4 minutes.

9Take care that vegetables are not overdone, they should be crisp.

10Mix salt and pepper to taste.

11Add the cooked rice and mix well.

12Now mix the soya sauce, vineger and green chili sauce to it.

13Cook the chinese fried rice for 2 to 3 minutes and serve hot.
