Ingredients
- 1 3/4 cups coconut milk
- 2 tbsp. Thai red curry paste
- 2 garlic cloves, crushed
- 1 lb. cod
- 2 tbsp. fish sauce
- 1 large red chili, sliced and seeded
- 1/2 tsp. ground turmeric
- salt and pepper
- 2 tbsp. chopped fresh basil
- 2 tbsp. chopped cilantro
- shredded coconut, to garnish
- rice, to serve
Directions

1Place coconut milk in a large pan and bring to a boil.

2Reduce the heat and simmer for 10 minutes, or until it has thickened.

3Stir in the curry paste and garlic and simmer for an additional 5 minutes.

4Cut the cod into 3/4 inch chunks.

5Add to pan and bring to a boil, stirring constantly.

6Reduce the heat and add fish sauce, tumeric, chili, and 1/2 tsp. salt.

7Cover the pan and continue simmering until fish is done, adding water if the sauce gets too dry.

8Stir in basil, cilantro, and season to taste with salt and pepper.

9Sprinkle with shredded coconut and serve with freshly cooked rice.
