- 2 qt. milk
- 8 egg yolks
- 2/3 c. sugar
- 1/2 tsp. salt
- 8 egg whites
- 1/2 c. sugar
- 1 c. rum
- grated nutmeg, to taste
Directions

1Scald milk (but do not boil).

2Beat egg yolks with 2/3 cups sugar until light and fluffy.

3Add salt and hot milk.

4Place over low heat or in double boiler and cook, stirring constantly, until mixture thickens (not too hot, not too long).

5Beat egg whites until stiff, gradually adding the 1/2 cup sugar.

6Fold into hot mixture.

7Stir in rum and top with nutmeg.
