Hot Egg Nog

  • 2 qt. milk
  • 8 egg yolks
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 8 egg whites
  • 1/2 c. sugar
  • 1 c. rum
  • grated nutmeg, to taste

Directions

    Scald milk (but do not boil).

    Beat egg yolks with 2/3 cups sugar until light and fluffy.

    Add salt and hot milk.

    Place over low heat or in double boiler and cook, stirring constantly, until mixture thickens (not too hot, not too long).

    Beat egg whites until stiff, gradually adding the 1/2 cup sugar.

    Fold into hot mixture.

    Stir in rum and top with nutmeg.
