- 1/2 cup celery thinly sliced
- 1/4 cup cauliflower florets tips, chopped
- 1/4 cup carrots chopped
- 1/4 peppers sport, thinly sliced
- 3/4 teaspoon dried oregano
- 1/2 teaspoon minced garlic
- 2 tablespoons white wine vinegar
- 1/2 cup olive oil
- giardiniera

Directions

1Combine all vegetables in a bowl, then add garlic and oregano.

2Stir to distribute, then add vinegar and oil, stirring again.

3Cover and store in a cool place for 24-48 hours before using.
