- 3 c. cooked long grain rice
- 1 c. sour cream
- 1 (4 oz.) can chopped green chilies, drained
- 1 medium jalapeno pepper, seeded and diced
- 1 small can sliced water chestnuts (optional)
- 1 (8 oz.) pkg. Monterey Jack cheese, grated
- 1/2 c. grated Cheddar cheese
Directions

1Wash, trim and dry potatoes.

2Grease skins, if desired.

3Bake at 400° for 15 minutes.

4Reduce heat to 375° and continue baking until potatoes are soft.

5It takes about an hour for medium potatoes or 1 1/2 hours for large ones.

6Turn off heat and leave potatoes in oven to cook, if desired.
