Hot Pepper Rice

  • 3 c. cooked long grain rice
  • 1 c. sour cream
  • 1 (4 oz.) can chopped green chilies, drained
  • 1 medium jalapeno pepper, seeded and diced
  • 1 small can sliced water chestnuts (optional)
  • 1 (8 oz.) pkg. Monterey Jack cheese, grated
  • 1/2 c. grated Cheddar cheese

Directions

    Wash, trim and dry potatoes.

    Grease skins, if desired.

    Bake at 400° for 15 minutes.

    Reduce heat to 375° and continue baking until potatoes are soft.

    It takes about an hour for medium potatoes or 1 1/2 hours for large ones.

    Turn off heat and leave potatoes in oven to cook, if desired.
