Ingredients

  • 3 (28 oz.) cans tomatoes
  • 1 1/2 c. jalapeno peppers
  • 1/4 c. garlic
  • 1/2 c. oil
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar
  • 1 (5 oz.) can tomato paste
  • 1 1/2 to 2 c. roux
  • meat (can be chicken, hen, ground beef, deer, stew meat, rabbit or other game; ground beef formed into meatballs)
  • 2 Tbsp. canola oil (to brown meat)

Directions

    Brown meat in a little oil on stove or bake meatballs in oven, pouring off grease.

    After adding roux, add meat.

    (For meatball stew, cook down somewhat before adding meatballs, then season to taste and turn fire down to medium-low; cover and cook 30 minutes.)

    Cook until meat is tender.

    Serve over rice.
