- 1 package soba noodles
- 1/2 medium sweet red bell peppers diced
- 1/2 medium green bell peppers diced
- 1 each scallions, spring or green onions thinly sliced
- 18 cup parsley leaves fresh, chopped
- 1 tablespoon sesame seeds lightly toasted
- 1 tablespoon hot pepper sesame oil
- 2 tablespoons brown rice vinegar
- 2 tablespoons mirin (sweet seasoning)
- 18 teaspoon sea salt
Directions

1Cook pasta as package directs, rinse and drain.

2Chop pasta coarsely, if desired.
