- 2 c. white cornmeal
- 1/4 tsp. baking powder
- 1 1/4 tsp. salt
- 1 tsp. sugar
- 1/4 c. half and half
- 1 Tbsp. vegetable oil
- 1 to 2 c. boiling water
- vegetable oil
- softened butter
Directions

1Combine first 4 ingredients in a bowl.

2Stir in half and half and 1 tablespoon oil.

3Gradually add boiling water, stirring until batter is the consistency of grits.

4Pour oil to a depth of 1/2-inch into large heavy skillet (cast-iron); place over medium-high heat.

5Scoop batter into a 1/4-cup measure; drop into hot oil and fry in batches 3 minutes on each side or until golden brown.

6Drain on paper towels.

7Serve with softened butter.

8Makes approximately 1 dozen.
