  • 2 tablespoons truffle juice
  • (see Pantry, page 253)
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lemon juice
  • 6 tablespoons extra-virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons soy sauce
  • 3 tablespoons fresh lemon juice
  • 5 tablespoons extra-virgin olive oil
  • 1 tablespoon truffle oil
  • OR
  • 3 tablespoons soy sauce
  • 3 tablespoons fresh lemon juice
  • 5 tablespoons extra-virgin olive oil
  • 1 tablespoon water

Directions

    Whisk together the truffle juice, soy sauce, lemon juice, oil, and pepper until well combined.

    Whisk again just before using.

    The dressing can be covered and refrigerated for up to 3 days.
