- 6 -8 potatoes (the brown ones are fine, peeled and cut up into chunks)
- 14 lb baby carrots (Mom says 'a handful', I'd use 1/4 of a bag)
- 14 cup red onion, chopped
- 1 tablespoon butter or 1 tablespoon margarine
- 1 -2 tablespoon milk
- salt & pepper
Directions

1Simmer potatoes, carrots, and red onion in a pot with water, uncovered, until cooked, about 30 minutes.

2Test with a fork to be sure, it should pierce the potatoes easily.

3Drain and remove to a bowl.

4Add butter or margerine, and a splash of milk--not much, because the carrots will make it watery.

5Add salt & pepper to taste.

6Beat with beaters until smooth.
