Hummingbird Cake

Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 c. oil
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 c. white sugar
  • 1 tsp. baking soda
  • 3 eggs, beaten
  • 1 1/2 tsp. vanilla
  • 2 c. chopped pecans or walnuts

    Mix dry ingredients together.

    Add eggs and oil.

    Stir only until dry ingredients are moistened; do not beat.

    Stir in everything else, except 1 cup of nuts.

    Bake in three 9-inch pans at 350° for 25 to 30 minutes, or until toothpick comes out clean. Cool in pans 10 minutes before removing.

    Fill and frost.
