  • 1 can cream of mushroom soup
  • 1 c. mayonnaise
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 small can mushrooms (and juice)
  • 1 lb. New York State cheese, grated (sharp)
  • 1 small jar pimiento, chopped (reserve juice)
  • 1 (8 oz.) pkg. macaroni
  • bread crumbs

Directions

    Cook macaroni according to directions.

    Drain. Combine soup, mayonnaise, mushroom juice and pimiento juice. Toss macaroni with onion, green pepper, mushrooms and pimiento.

    Arrange in two layers with cheese in the middle.

    Pour sauce over and top with bread crumbs.

    Bake in a buttered casserole at 350° for 20 to 30 minutes. Serves 8 to 10.
